I was inspired to re-create this sandwich I had a few months ago at a local favorite bar & grill. Not your average bar & grill food. They always have hip and healthy food on the menu. This sandwich is one of the best things I’ve eaten! So I knew I had to add it to my list of things to make at home!
Cod Bahnmi
1 whole wheat baguette sliced
Cook cod at 400 for 15-20 min
Grate 1 carrot into a small bowl and add 2 tbsp rice vinegar, stir & set aside
for the sauce:
2 1/2 tbsp plain greek yogurt
2 1/2 tbsp mayo or vegenaise
1 tbsp lime juice
3/4 tsp fish sauce
a few dashes cayenne pepper
1/4 cup chopped cilantro
1 scallion, diced
spread sauce on bottom of baguette
place cod on top of sauce
use a slotted spoon and spoon carrots on top
place thinly sliced cucumber over carrots
set top of baguette on top and enjoy!
