Today’s link up with Peas and Crayons is a hodge podge of some of my favorite things I ate in the last few days. I chose one thing for each meal.
Raspberry Chocolate Coconut OOIAJ
1/2 cup rolled oats
1/2 cup greek yogurt
1/2 cup almond milk
1.5 tsp chia seeds
1/2 tsp. coconut extract
Put everything in a mason jar with a lil and shake up. Refrigerate over night. In the morning top w/raspberries, some shredded unsweetened coconut & 1 tbsp. melted dark chocolate chips. Enjoy! If you haven’t made overnight oats in a jar (OOIAJ) yet ya better hop on it! It’s a staple when you don’t have a lot of time in the morning ’cause it’s grab n’ go!
Chocolate Butterscotch Shakeology Pudding
1 scoop chocolate shakeology
1/2 cup cooked brown rice
1/2 cup almond milk
1/2 tsp. butterscotch extract
Mix & eat. I made the night before so rice would absorb the liquid.
After seeing Heather from kiss my broccoli make something similar the other day I decided to give goat cheese another chance! I’m not usually a fan but it always sounds so lovely so I’m gonna make myself like it! This is a Panini wrap w/turkey, spinach, goat cheese, walnuts & dried cranberries. I actually liked the goat cheese more since it was melty and ooey-gooey. 🙂
This is always a great snack. Try broiling your grapefruit 5-10 min. It carmelizes it a lil and brings out the natural sugars. Paired it with cottage cheese w/cinnamon & almonds. Protein, healthy fat & fruit. BAM! Perfect snack!
Mango avocado halibut ceviche with quinoa. This is nice to make earlier in the day, let the flavors merry and the citrus cook the fish and you got dinner ready when you get home! You can do this with any seafood. I think shrimp is probably my favorite.
I saw fabbylousness post this scrumptious looking dessert on instagram the other day and knew I needed it in my life!
Apple Pie Mugcake
1/4 cup oat flour
1/4 unsweetened applesauce
1/4 cup liquid egg whites
1/2 tsp. vanilla extract
a few dashes cinnamon
stevia to taste
Microwave in a mug or small bowl for 1.5-2min.
Top with 1/2 an apple pie quest bar, microwaved 10 sec. & a lil greek yogurt.
